This salad is so healthy and flavorful and also very easy to make! Makes a delicious and colorful side for summer bbq’s. Or eat it alone for lunch, the protein from the beans makes it very filling.
Use organic beans and make sure the cans are BPA free. You can usually tell a can is BPA free if the inside is orangey in color versus the typical tin can color. Also get organic vegetables, or at the very least the bell peppers because they’re part of the ‘dirty dozen’ produce list!
- 1 can red kidney beans
- 1 can black beans
- 1 can white kidney beans
- 1 green bell pepper
- 1 red or orange bell pepper
- 1 bunch of green onions
- 1/4 cup chopped cilantro
- 1/4 cup of cold pressed olive oil
- 1/4 cup white vinegar
- 2 tsp yellow mustard
- salt and pepper to taste
- juice of half lemon
Rinse all the beans well and drain
Dice all the vegetables
Whisk together the olive oil, vinegar, mustard, and the salt and pepper
Mix everything together and let chill in fridge. Serve cold and enjoy!
